“ It’s hard to believe that the youthful-looking Darrell Felstead in the open kitchen has been an integral part of Sydney dining since the 90’s, what with Forty One, Banc, Post, Prime and The Restaurant at 3 Weeds all on his track record. Yet the food hitting the perfectly pressed, double-clothed tables of his sleek, sandstone-walled Surry Hills hideaway is very much of the here and now. Witness the dramatic pairing of meltingly tender deboned quail with a crunchy smoked eel croquette and forceful caper puree, or the dream team combo of caramelised veal tongue with fat, delicate scampi and velvety sea urchin custard. He can do delicate – a dish of sweet, clean-tasting leatherjacket with braised rabbit and peas is impressive – but isn’t scared of powerful flavours, either. A perfectly fine ginger sponge with carrot marmalade didn’t turn heads, but it’s about the only thing that didn’t. The elegantly pale, blond room and louche bar downstairs make it quite the romantic choice.”
