I am inspired by the different, the unusual and the wrong.
Since opening Foveaux in 2007, I have sought inspiration for my menus from traditional lessons, childhood experiences and the mundane.
I am driven by challenge, change and the unusual. I want people to wonder, to feel trepidation as they choose their dish. I don’t do food by numbers, it bores me. I want change, I want weird, I want to do what hasn’t been done.
The challenge of combining the unusual is what keeps me going, we don’t believe in sitting on our laurels, I always wonder what will shock people, what will.
I try things that people deride, that people frown upon, that people don’t expect. What haven’t people tried.
