Matt Siely joined the Foveaux team in 2007 after 5 years of extensive travel and work in the industry culminating in international experience working at global award wining venues such as Zeta Bar, Sydney and London hot spots Shochu Lounge and Lonsdale.

With a passion for ‘all things drinks’, Matt has been privileged enough to be taught and guided by industry innovators including Jason Crawley and Tony Conigliaro.

Travels around the globe have also led to extensive study at distilleries gaining priceless knowledge whether it is with Masters of Wine in Champagne or Jimadors in Mexico.

Foveaux is now the launching pad for Matt to express to Sydney his zeal in paying homage to the great bartenders of the past who set standards in drinks and service that today still lay unsurpassed.

With a drive for drink perfection and customer interaction Matt has designed a cocktail list for all palates and senses to be ignited with a combination of drinks dating back to 1862 mixed with current creations to show to all the evolution of the cocktail.
